Kiwi Drying Process

1. Select mature, fresh kiwi fruits.
2. Wash thoroughly.
3. Peel if required.
4. Slice into 46 mm uniform thickness.
5. Optional: Dip in a mild ascorbic acid/lemon solution to reduce browning.
6. Arrange slices in a single layer on food-grade trays.
